Ok, I've been digging around in my cupboards and I found some some packages of Bumble Bee brand salmon. They aren't canned, but rather it's those flat packages made of thick foil, kind of like they do with an MRE. The date on the package reads "best by January 2009". This fish is a mere one year and seven months out of date. I am taking my life into my own hands for the benefit of everybody here. So, will Opsec die a horrible, grisly death? That question will be answered in the next twenty four hours because I am eating two of these as I sit here typing this. BTW, salmon goes really well with Mahatma brand yellow rice that comes in those shiny mylar sleeves.

I buy salmon foil packets by Pillar Rock, and they have no expiration date on them.  I've never opened a packet and found it to be of questionable quality.

Anecdotally, I inherited a supply of sealed WW2 rations that were still edible. The taste was grim, but the veteran I shared them with said they hadn't changed.

SOUFFLE FOR FISH

1/2 c. mayonnaise
4 Tbsp. flour
1/4 tsp. salt
1 tsp. lemon juice
1 to 1 1/4 cups fish (canned or pre-cooked)
dash of pepper
4 Tbsp. milk
2 Tbsp. chopped parsley
1/4 tsp. grated onion
4 egg whites

Preheat oven to 325degF. Mix together everything except the egg whites, and then set aside. Beat egg whites until stiff. Gently fold mixture into egg whites. Pour into a 7" greased casserole. Bake for 40-45 minutes. Serve at once.

Update: Same brand and packaging of salmon. This time the manufacturers expiration date was November of 2009 making the fish 2 years and 2 months out of code. Smelled and tasted great.
