Mike, soak old beans overnight before cooking. Might even want to change the water once.

Thanks!  It will be a week before I cook beans again.  I'll be soaking the beans then.

Remember to leave expansion room for the beans, meaning you only fill the vessel 1/2 the way up with beans and then fill it with water. Try using hot water instead of cold water. That seems like it would help.

The folks who taught me said cold water for an overnight soak and hot/warm water for a shorter soak. These folks would buy a 100 pound sack of beans every autumn from the new harvest and i bet they seldom had much left by the next autumn.

I suppose if your beans had gotten old then longer soaks would be in order. If your beans are stored per the directions of AverageJoe I'm guessing they will be just like new a decade later.

I try to have some of all that are available in highest quality organic. Many different uses for each type of bean. Variety is the spice of life and i don't want to think about eating the exact same thing day after day after day, ... ever.

By far I prefer lentils; then split peas.  My son prefers black beans.  My wife prefers pinto beans, so that is the staple.

In my opinion, .... well yeah, "if one has expendable cash invest in food storage,"  but even if one ..... especially if one doesn't have expendable cash it is crucial to buy in bulk, and thus slip into a food storage regime.

My bulk food storage is nothing more than used food-grade five gallon buckets I get from a restaurants for free.  I buy in bulk and put the excess in the buckets.

My next purchase will probably be a bag of salt.  I hope it fits in one five gallon bucket.
