Summary:

Rabbits are easy to raise
Quieter by far than chickens
Easy to slaughter and butcher
They don't compete much with us for calories
They convert our veggie scraps to fertilizer
They turn food into meat 6 times more efficiently than cows
They reproduce quickly
The meat doesn't taste gamey

They also provide pelts that can be used for a multitude of purposes.

All good points. I only see one down side to rabbits, they do not have enough fat to support the human diet. People have died of malnutrition even though they had plenty of rabbit meat, it used to be called rabbit fever.

It's unlikely that any of us would end up eating NOTHING but rabbits.

If fats are lacking plan for something like tree nuts (including potentially wild nuts such as hickory nuts) or pumpkin seeds. Rich in essential fatty acids we need to build hormones out of. If you have a choice, give preference to whole grain breads, which contain the germ.
We're running out of petroleum. Are you ready?

Native americans ate the entire animal, down to pounding the bones into meal.  I imagine that makes up for some of what would be lost ordinarily.

Bone marrow has a lot of fat in it. That might have saved them. I use the bones to make soup stock.
