Mujardara

Many recipes for this hearty vegetarian Middle Eastern delight.

My wife's recipe

One thinly sliced Onion
Four medium cloves of diced garlic
2 C water
1 C Lentils
Leftover Brown Rice
Cumin, Paprika and Oregano
Sunflower Oil
Salt to taste

Sautee (sunflower oil) Onions and garlic on low until Onions quite brown.
Add Lentils (soaked overnight) to boiling water
  turn down to a simmer once water boiling again and add
onions and garlic.
keep an eye on the Lentils as you don't want them mushy.
about 20 minutes.
Add cumin, oregano and paprika at the end

We add among the following once we are seated:  chili pepper, nutritional yeast, Bernard Jenson's seasoning.

Lentil Kale Soup

10-12 C Water depending on size of pot
1 C Lentils
1 thinly sliced Onion
4 cloves diced Garlic
One bunch Kale shredded
Bernard Jensen's Seasoning

Add onion and garlic to boiling water for about ten minutes
then add Lentils.  turn to simmer for another 20 minutes.
Add Jensen's seasoning and Kale during the last five minutes

Once at the table we will add, Flax Seed Oil, chili pepper, himalayan salt, nutritional yeast


Wild Rice, Lentil, Turkey & Portobello Soup

1 Medium finely diced Onion
4-5 finely diced cloves Garlic
1 large diced Carrot
1 diced Celery
1- 1 1/2 C diced turkey
1 C or so of Portobello Mushrooms
1 C wild rice (uncooked)
Big pot of water filled 3/4 or so (depending on how much you want to make)

sautee onion and garlic
when translucent 
add carrots
when carrots tender
add 1 celery, diced turkey and wild rice
cook about 40 plus minutes
you'll have to taste the rice a few times so it doesn't get overcooked
add portobello mushrooms five minutes before you turn the heat off (don't overcook the mushrooms).

Sage
Salt & Pepper

We highly recommend Jenson's Seasoning.  Get the large 20 ounce jar and keep very dry as it can cake inside over time.

Mmm, that mushroom lentil turkey soup sound great.  I'll have to give that a try.
